Our produce

Organic extra virgin olive oil

As the farm was in a state of abandon for many years the fields and the terraces were reclaimed from the invading woodland.
Situated at an altitude of 300/350 metres on the eastern side of Volterra, our farm covers an area of about 4 hectars and includes olive groves, cherry and peach orchards.

Our produce is organic, grown without any artificial chemicals or pesticides.
The variety of olives are a traditional mixture of Frantoiano, Moraiolo and Leccino.

The olives are harvested in the first two weeks of November, or as early as the end of October, depending on the maturation of the olives.
They are picked by hand, combed from the branches, and collected onto the nets spread beneath the trees. The olives are then placed into plastic crates, each holding about 20 kg which are weighed and stacked ready for transport to the olive press. The olives are kept in a dry environment until they are pressed. This is important to maintain the quality of the final product, because lengthy and incorrect storage can cause fermentation and other damage.


Our artichokes

We also organically grow Volterra and San Miniato globe artichokes. The latter is rare: today very few local farmers cultivate this variety, preferring other species. San Miniato artichokes are still available thanks to the ardent determination of a few farmers who still work these soils.
